Usually comes down to the frying temperature. Too hot and the outside browns before the syrup can soak in properly, leaving it dense in the middle. Ours are fried slower so the syrup actually gets absorbed all the way through.
Either works, honestly. Some people warm it slightly before serving since the syrup loosens up a bit, others prefer it straight from the fridge. Comes down to personal preference more than any rule.
